help choosing a beehive and bees?

I been wanting to produce my own products/ items and so I would like to make my own honey and beeswax candles.

What type of honeybees are best for making honey and beeswax candles (personal use and maybe for selling), can survive cold winters ( I will live in NC, WV, PA or another state nearby) and are calm/less likely to sting.

What hive is best to keep them in? Warrer, top bar or langstroth. I plan on just letting my bees go and collecting the honey/combs only so often and I rather not have my bees die during the winter or produce less because of stress.

I have been doing research, but getting opinions from people who have actually had bees is always better so thank you!
or any other type of hive besides the ones I mentioned..
